Diet sponge cake for your creations: Easy, Soft, Delicious and Quick

The first attempt, while the sponge cake is cooling down, it looked appetizing. But, nothing better than a bite to settle down and get a clear idea. After 30 minutes of patience, the knife slides into the softness of the sponge cake, making you wanting to bite into this so called testing bit. The verdict falls, light, fragrant and delicious, we adopt it. Now it's on our favorite list of desserts.
Sponge cake with almond almond powder

Ingredients
For a small sponge cake, follow the recipe as described below, otherwise you can double the ingredients and use a larger or deeper mold.
3 eggs
5 g of stevia
65 g of almond powder
Optional, Flavor (Vanilla, almond, orange blossom water...)
Optional, for cinnamon lovers, 1 tea spoon of cinnamon
Preparation
Preheat the oven at 175°c (347° F)
Separate the whites from the yolks
Whip the white until stiff
Blanch the yolks with the stevia (Optional, flavor with the aroma of your choice, for example orange blossom water and/or cinnamon)
Stir in the ground almonds (and cinnamon if you wish)
Add the beaten egg white in 3 strokes without breaking the air bubbles
Pour into the mold (smooth the surface gently)
Bake for +/- 30 min
Optional: soak in the aroma of your choice
For the topping, it's an open door to your imagination as long as you stay in the nails of healthy pleasure. A few possible leads, 70% dark chocolate, light whipped cream, stevia syrup flavored to your taste or just simply plain... everything is good in the sponge cake! Healthy topping ideas? Share with us.
