Light Parisian flan without sugar, the recipe

The flan needs time in the fridge to firm up. It is recommended to do this in the evening or the night before to give it enough time to properly shape and grip. It is optimal to prepare this recipe in the morning. Opt for a 70% or 75% dark chocolate for a very low sugar content and a low GI. You can mix different chocolates as needed, just keep in mind that the whiter it is, the higher the sugar content.

Ingredients

For our recipe we need:

  • 1L semi-skimmed milk

  • 30 cl of liquid cream 18% or 20%

  • Vanilla flavor (or other according to your taste)

  • 45g stevia (or 80g caster sugar)

  • 4 eggs

  • 80g cornstarch

Preparation

Preheat the oven to 220°C Prepare the mold with baking paper and let's go,

  • Put the milk and cream in a saucepan and heat until boiling

  • Meanwhile, blanch the eggs and stevia

  • Add the flavor

  • Add the cornstarch gradually and mix gently

  • Pour the mixture into the saucepan with the milk and cream over the heat, stirring until it thickens

  • Once thickened, add a few drops of aroma again, stirring just before pouring into the mold

  • pour into the mold with baking paper

  • Put in the oven for +/- 30 min (the surface must brown evenly)

  • Leave to cool then put in the fridge overnight.
